This week I actually had enough time and motivation to create a meal plan. It included:
Egg casserole with sausage, bell pepper, mushroom and onion
Hummus crusted chicken with watermelon and feta salad and cornbread,
Zucchini crust pizza with sausage, mushrooms, onion, and bell pepper
Thai Chicken Quinoa Bowl
Southwestern turkey lettuce tacos
Shrimp "Fried Rice"
I wasn't really meaning to go for a low carb meal plan, but it actually is pretty light in carbs with the quinoa being the primary source of carbs. Although I think we've got a few tortillas floating around that will probably be used with the tacos.
